Taco Seasoned Sweet Potato Fries

Combine:
1 T chili powder
1 tsp sea salt
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp garlic powder (I use more)
1/2 tsp cumin

Cut 2 lbs sweet potato into French fry size wedges and spread out in a single layer on a jelly roll pan. Toss with 2 T of oil of your choice (I use coconut or olive). Sprinkle with seasoning mix and toss to coat again. Place in 400* for approx 25 minutes, turning wedges half way through cooking.

*Kelly, I think they would be fine - they aren't white carbs - is that what you said you were avoiding? I do make them with potaotos as well.

I liked this so well that I adapted it for tacos too....

Tacos:

To the above I add 1 T Chili, 3/4 C water, 1/2 C onion and cooked ground beef or turkey. Simmer.

Hi De'Etta,
Just thought I would mention that I actually adapted the taco seasoning for these fries from a Top Secret Recipe for Taco Bells taco meat, so you using it for taco meat makes perfect sense. I would add that in the original recipe they add some flour to mix into the raw meat /seasoning mixture before cooking & add the water at the beginning of the cooking process. It really works great if you don't want to drain the fat away. I usually only do this on occasion though, because I like to drain it. Also, did you see the chorizo sausage recipe in WFWF cook book?

LOL - so you took it and adapted it and I love the sp fries and adapted it back to be tacos too. LOL

I always have to drain and rinse all ground meat...unless it is the turkey or the lean organic you can get at the commissary...I don't like the fat. LOL

I did see the chorizo sausage recipe but I've not tried it. We love the breakfast one. Let me know what you think about the chorizo if you try it. Wouldn't you have to use casing for it? I don't do any sort of animal gut..if you KWIM. :::gag:::

Actually, when I used chorizo, it was raw, so I removed it from the casings & cooked it like ground meat anyway, so no I wouldn't do any *guts either.
I'll let you know what I think of it. I think I will mix gr. Turkey with Gr. beef for it.
Great talking with you today. Maybe I will put my foot down about seeing an Endocrynologist. It couldn't hurt, right? :-(

Thanks De'Etta. I'm avoiding refined sugar and white carbs to start. Then we'll see what else I'll eliminate from my life lol.

I think I'll use that for tacos, too. So much better than the high salt packet taco stuff.
