CIA COOKIES

*Notes: today is a day when I decided I needed to mainline chocolate and there are simply NO M/Ms, Butterfingers, Snickers in the house. So Arielle and I made Cia Cookies.

These are called Cia cookies because my friend TriCIA gave the recipe to Adrienne and that is what she called them. These were a STANDBY in the dorms in the Philippines. We had them once a week. Adrienne adapted the recipe to use carob and honey and gave them to me. I thought they were "ok" with honey but they didn't set up like I wanted them to do...so I adapted them to use Rapadura.....and I have no idea what the original recipe is - maybe Tricia will share it with us in the comment section. {G}

Adrienne's Version of Cia Cookies
4 T carob
1 3/4 - 2 Cups Honey
1/2 C milk
1/2 C butter

Boil 3 min, take off heat and stir in
1/2 C peanut butter
5 C oats
1 tsp vanilla

My Version of Cia Cookies * Leave out the cocoa and these are great peanut butter no-bakes! 
1/4 C  Cocoa
2 C Rapadura
1/2 C milk
1/2 C butter

Boil 1 - 1 1/2  min, take off heat and stir in
1/2 C peanut butter
3 C oats
1 tsp vanilla

Lay out on wax paper until firm.

From the pictures, the cookies look like what we call no-bakes. Is Rapadura a natural sweetner? I tried making them with splenda but they just didn't set up well. The cookies look delicious!

Yes, they are no bakes...but since hearing Adrienne call them Cia cookies we do too - has a certain "flare" that "no bakes" doesn't. LOL

Yes, Rapadura is a "natural" sweetener. It's evaporated cane....I think. Oh I'm BAD....I research and then don't remember what I find but I usually remember my choices. LOL

I use honey most, Rapadura next....then I also sometimes use Agave Nectar (tea and lemonade mostly). OH and I have that other one that is really concentrated that I use in tea - but I'm not brave enough to cook with it....ummm....starts with an S....STEVIA.

Rapadura has a slight toffee or molasses flavor but I really like the way it bakes better than honey in many things.

I will try this recipe sometime soon. On of my kids was behind me and saw the picture, he said I want some cookies! Luckily I made some today too but they are choc. chip. Not quite as chocolatey as these look but we will try them soon.

Jodi - these are my LAZY cookies - they are sooooo much quicker than chocolate chip cookies but I see those in the near future.

I've been so dizzy and nauseated that I've not beeing cooking much the past month. I owe the kids some treats - meals too for that matter.

De'Etta,
You don't know me, but I read your blog often for inspiration. I am hsing 6dc and felt like there were no other crazy moms hsing a large family. Then I saw your blog :)

We have always called them no bakes (but my dh's co-worker calls them horse t*rds. Kind of looks like...). The only difference in the recipe is 2 cups sugar instead of a sugar substitute.

Amy - welcome. We've lived in MT and loved it...Hardin and then Great Falls.

Yeah - I was thinking we should call them cow pies myself...but settled on Cia instead...no bake just sounds tooo lazy! LOL
