Menu Plan

Monday - Popcorn chicken (Yes, we had this last week. Mike & Jared won't be here. The littles love it...I use shake and bake chicken and do drumsticks or strips or popcorn chicken and they never tire of it).

Tuesday - Manicotti, salad, Fannie Mae Cake (can I find the recipe? It's Mike's birthday).

Wednesday - Dirty Rice et al. (Kristine's Blog)

Thursday - Crockpot Roast or Stew - VERY busy day with MOPS, Bible Study and MOSC.

Friday - Pizza and/or Nikuman

Saturday - 3 Cheese Garlic Chicken Pasta (Heavenly Homemaker)

I'm sure I have the Fannie Mae Cake recipe (which I got from you!) if you can't find it. :)

Fannie Mae Cake

1 stick butter or margarine
1 cup sugar
4 eggs
1 can Hershey's syrup 16 ounces
1 cup + 1 tsp flour
1 teaspoon vanilla
Center Layer:
1 stick butter or margarine
2 cups powdered sugar
2 tablespoons milk
green food coloring
peppermint extract
Topping:
1 cup chocolate chips
6 tablespoons butter or margarine

Cream margarine and sugar. Add eggs and beat until light and fluffy. Add remaining ingredients. Bake at 350° for 30 minutes in a 9x13 pan. Cool well. Mix ingredients for center layer well, and spread over cooled cake. Chill until firm. Melt chocolate chips and margarine together. Cool slightly and spread evenly over green layer. Chill and cut in small squares to serve.

Hah, I'm SO glad you're trying the Dirty Rice! My friend Amy brought this to a couple of potlucks, and it was terrific. It didn't hurt that it was soooo easy to make, easy to add/change, whatever!
