My Adaptation of Uncle Bill's Chocolate Pecan Pie

4 oz of PURE semi sweet chocolate ( no artificial flavors)
2 T Butter
1/3 C Rapadura
1 C Honey
3 Eggs, beaten
1 tsp Vanilla (I always pour this in - much more)
2 - 3 C of Pecans

unbaked 9 in pie shell

Melt chocolate and butter. At the same time bring honey to a boil. Combine mixtures and add Rapadura (I'm hoping it will dissolve). Beat in eggs, vanilla, and pecans. Pour into shell. Bake at 350* for 40-50 minutes. {Stephanie suggests 400* for 10 min then 300* for 30 min.}

*Note - I have now made this and it was GREAT - but VERY RICH! I did not boil the honey...I put the honey, butter and chocolate in the microwave and proceeded....nuked 2 min stirring every minute.

Maybe it has another brand name here.

Dorothy....Bill used sugar so that would work fine.

Rapadura is organic evaporated sugarcane sugar.....one step less refined than sucanat. It is said that it is the least processed and somehow the processing is better. I use honey as much as possible but sometimes in baking I need a "dry sugar" and I use rapadura.
