Breakfast Sausage

I miss sausage - though I know it's terrible for me. Here is the sausage I made this week and it is GOOD.

1 tsp sage
1/2 tsp marjoram
1/2 tspt thyme
1/2 tspt coriander (I didn't have)
1 t.sp sea salt
1/8 tsp pepper
1 - 3 T water
1 lb ground meat

I used organic turkey. I could use beef. YOU could use pork, if you so desire. If you are going to do that I think I'd just go buy it on sale. LOL Well come to think of it - even with pork you would have less perseravtives. Also I doubled the spices - but thought I'd share the original, cause you all know I'm a "spicey gal" {thanks for the chuckle Jodi}. Also - you can put this in casings - but why? Yuck. I will make patties and freeze...or logs...this time I simply fried it as I had begun with frozen meat and wasn't sure about refreezing. Anyone know about that????

Sprinkle seasonings & water over ground meat; knead until blended. Refrigerate in airtight conainters for 2 or 3 days to allow flavors to blend. If you plan to use the sausage immediately, the spices will not be as strong.

You cannot refreeze meat unless it's cooked first. You have to start with fresh, then freeze or cook the frozen, then freeze.lol

HTH!

This is one I'll be trying...Yum!

Question De'Etta et al,
What is the appropriate number/temp setting for a stand alone freezer?
My gh bought a used one and he set the dial for the highest setting #7. It seems too cold for the meats I put in there.

Oh De'Etta! My friends and I were just talking yesterday about missing sausage and not having a good replacement for it. You're a breakfast saver. :)

Where do you get your organic turkey?

Beth- www.shopnatural.com You can order from them from the website but pay shipping that raises prices.

If you set up a co-op you get cheaper prices than shown on the website....our min order is $250 and we meet the truck to pick up our stuff. I buy my turkey from the co-op. It's good stuff. Shelton maybe?

Your friend over at Wisdoms Way of Learning said you have a fabulous sausage recipe, so I came over to have a look... Wow - you have a lot of blessings! That's awesome! Your family is a praise to His glory: ...That we should be to the praise of his glory, who first trusted in Christ. Ephesians 1:12
