Heather/Urban homemaker/De'Etta's Potato Cauliflower Soup ::snort::



Yep - I printed off 4 pages of really yummy looking soup recipes at Urban Homemaker today. I meshed Marilyn's recipe, with Heather's (that I posted a couple of weeks ago), with my additions....yumm. Mike said "you can leave out the cloves next time".... I did blend it all tonight hoping to entice the younger ones to eat it. ::sigh:: BTW - now that spring is here I will put my winter plates and snowmen away...maybe tomorrow.
4 medium potatoes
2 onions, diced
leeks - whatever I have
1 head cauliflower (4 cups)
1 carrot, chopped
2 c Chicken broth
2 C milk or broth (I used 4 Cups of broth)
1 T spike (didn't use at all)
1 8 oz cream cheese, diced
1/4 - 1/2 C butter (I left out)
1/4 tsp pepper, salt
1/2 tsp thyme, cloves
pinch of nutmeg
2 T parsley
1 T olive oil
Saute onions and leeks. Add veggies and broth. Boil and simmer. When veggies are tender add cream cheese (and milk if you are going to use them). Heat through but don't boil again.

Are you using your holiday plates this time of the year or just using it for the photo?

ok.. now I went back and reread it and see you are still using your winter plates. We only use our Christmas plates in December.. hmmm...maybe I should use them all winter instead of just in December.

I have snowman plates and these that I use all winter. I began doing this in AK where it was dark and we needed some cheering. You'll note that my plates have pine and ribbons on them - therefore the "work" for christmas but they fit my lodge look all winter. I was very careful in what I selected. LOL

That looks yummy! I noticed your plate right away and thought...hmm, I KNOW she is having nicer weather than us and I put the snowmen away last week LOL. Of course, you were rather busy last week :)

I love the Urban Homemaker. I've tried a few recipes and they've all been hits! I need to find a good pizza dough recipe. Maybe I'll hunt yours down next time. I used the Urban Homemaker bread dough and it was too doughy and nobody liked it.

Kelly - try the pizza one in the recipe section. I always thought home made doughs were to "bready" too, but the one Jamin's perfected is really, really close to normal and tastes GOOD.
