*Gram's Hawaiian Chicken (edited 23 Mar 2011)

Chicken - 4 C cooked
Onion - 1 med/diced
butter - 2 T
*Crushed pineapple - 15 oz can
tomato sauce - 15 oz
ketchup - 1/2 C
celery seed - 1 tsp
*honey 2/3 C (originally called for 2 2/3 C sugar - this is the only ingredient I've changed and it really doesn't taste right...play with sugar)
garlic powder - 1/2 tsp
Chili powder - 1 tsp
mustard 1 Tablespoon
Pepper 1/4 tsp
sea salt - to taste

Assemble all, bring to a boil and simmer 20 min. Stir frequently.

**Originally, grams would layer pasta or rice in a 9 x 13 or 15 x 10 pan. She fried chicken and laid the pieces on top. Simmered the sauce and then poured it all over the top of the chicken and rice and baked....probably 350* for 30 min.

I'm a freezer cook. I find it more convenient to make 6x this recipe. I boil the chicken and shred it. I simmer the sauce and then freeze in Ziploc bags. On the day we're going to eat it.....I begin brown rice in the steamer and pop the frozen sauce in the crock pot. The kids like being able to control the sauce/rice ratio.

This also originally called for 2 2/3 cups of sugar.....play with the amount until you find what you like..... other pineapple can be used but crushed gives the sauce more "body".

I always use way more spices than this calls for - but I'm a "hmmm...that should be right" type of cook so can't tell you how much....do it to your taste.

Thanks De'Etta. That looks really good. I'd probably serve the rice separate. Jordan likes to eat his stuff not mixed.... I don't measure spices either...just dump those babies in there lol.
