"What Are You Doing When You Retire?"

Here's the thing - we don't know exactly what we are doing when we retire. Our home of record is Alaska, and while that is a beautiful dream, I don't see 80 year old adults in Alaska unless one of our children is there. We don't have a location where we plan to move.  We're trying to be responsible and think, "If we were to settle in America, where would we want to live?" It makes sense to store our things THERE.  Montana seems to be the forerunner in Michael's mind. I don't really care. TEXAS would be my first choice - I've been vetoed.

To all who know us well - it isn't a secret we feel called, driven, compelled to move to Japan. We have no idea how this will work out.  While others nearing retirement joke about being a Walmart greeter, our joke is one of us will work at Pizza Hut on a military installation so we can have SOFA status. But here's the thing - God may not call us anywhere near a military installation. We could do many things to "get there." We could teach English. We could work at Pizza Hut. We could open an "American Cultural Center."  We'd love to work in an orphanage or start one - but that seems to be impossible for foreigners to do in Japan.

Our eyes are open. We know it is very unlikely a mission board will accept us if Michael's health issues turn out to be as serious as they could be.  We know the sacrifice of leaving children behind - and some days the thought brings tears. We know we are to honor our parents, and we're aware that Michael's mom is 87. We just don't know how it is all supposed to work; we just feel called, compelled, driven...

We are totally clueless about timing.

So here we are - time to make decisions. No, we really don't have an address to give you. No, we don't want our things moved to a new home - we're going to put the minimal in storage and sell, or give away, the rest. No, we don't quite know how we are going to get to Japan. No, we aren't sure when we'll get back to Japan.  We just don't know.

We do know we can't get away from this ONE thing...God has ruined our hearts for Japan. He's broken our hearts. We know the hope Japan is searching for. We aren't trendy. We aren't cool. We aren't young. We aren't particularly bright or qualified. We don't have a lifetime to invest - only 10 - 15 years. We just know we are to be a part of bringing true peace and hope to Japan. We know there are missionaries in Japan. We know there are very cool churches in the Tokyo area. We also know there is only one church for every 58,000 people in Japan (I've heard a higher number). We know that God has a place for us somewhere in Japan. We know that in the grand plan He has a  place for a middle-aged couple and their children - some small part for us to do.  We ache to get back to Japan and to focus on relationships with the Japanese people - rather than military ministry as we were called to do in our first four years in Japan. We were faithful in that season, God birthed a call in that season, a dream...

When you ask, "What do you plan to do when you retire?"

We aren't hedging when we respond, "We aren't sure."

We aren't being cutesy or joking when we say, "We're moving to Japan."

Most really don't have time for the whole story when they ask. It's a lot like those OTHER questions we're never sure how to answer, "Where's home?"  Or, "What do you plan to do when you graduate." We get Arielle's answers....we're there with this retirement thing.

This is what we're doing. Praying. Learning Japanese. Faithfully serving at Beale. Staying engaged in our current ministries.  Preparing emotionally to get rid of most our furniture (we'll save our bedroom set) and household goods. We'll save sentimental things and china. ::snort::

And I find myself with pressing questions racing through my mind, "Will that fit into 2 suitcases?"

"What WILL fit in two suitcases?"

"Good GRIEF what ARE we thinking?"

"What ARE we going to do when we retire?"

"Life was much easier in Japan with SOFA status."

If you've read this far - you most likely are still wondering, "What are you going to do when you retire?"

We honestly aren't sure. Our general plan is to put our things in storage. To pack up "The Caboose" and live in it for 6 - 12 months while we REST and continue to pray about this compelling determination we have to get back to Japan.

Banana Chocolate Cream Pie

A dessert without any guilt whatsoever - AND it's nutrient DENSE.  This is adapted from Fuhrman's Fudgesicles.
Ingredients:
4 ripe bananas
2 C cashews
6 T nonalkanized cocoa powder
2 tsp vanilla


Directions:
Blend until smooth.*

Pour into crust.

Chill 2 hours.

*If you don't have a vitamix, puree the bananas first, add cocoa, vanilla and blend. Add cashews...and blend, blend, blend.

I was a bit worried it wouldn't set up.....as I didn't freeze it...but it DID.  Now - it's not a Chocolate Cream Pie....but it's sweet, sugar-free, oil-free, dairy-free....and loaded with NUTRITION.


Zander wouldn't try it.

Nolan, Arielle and Stacia had seconds - and I didn't mind if they did. LOL

Michael said it was, "alright but not Chocolate Cream Pie." He suggested some whipped cream would make it much better....and it would.

I thought it was wonderful - rich - I couldn't finish it. Putting whipped cream on it WOULD be yummy - but would negate the nutritional value of it - I'd have to limit slices if they add processed sugar and dairy. LOL

This will be Arielle and my Thanksgiving Dessert. ::grin::

Zucchini Something or Other

We had a giant zucchini to finish using.  This turned out yummy and so I'm capturing it.


Ingredients:
Zucchini (or other squash)
Onions
Mushrooms
Garlic (2 - 3 cloves)
Bell Pepper
Sun-dried Tomatoes
1 T Italian Seasoning
2 tsp Fennel Seed
Sliced almonds
Nutritional Yeast

Marinara Sauce

Directions:
Half and scoop out the very large seeds.

Sauté the onions, garlic, peppers and mushrooms.  You can use whatever veggies you have and simply use what you need to fill the Zucchini.  I topped with sun dried tomatoes and sprinkled with Nutritional Yeast.

I think beans and/or rice would work too.

Sprinkle sliced almonds over the veggies - toasted would be yummy.

Finally, cover  with marinara sauce and sprinkle with more nutritional yeast.

I baked for 350 at 30 min (as that's what the meatballs needed), then I baked another 15 min at 425 - as that's what the Green Beans needed. I need to figure out the baking time. LOL

Stay At Home Thursday

I LOVE DAYS LIKE THIS. I got to be a STAY AT HOME Mom today! ::snort::  All day long.

I was just getting ready to work out when Stacia said, "Mom, let's sit in the hot tub."

We did.  We sipped tea and ate apple slices and sat in the hot tub. We got out and spent to long talking and were cold - so we got back in again. ::snort::

I've had a lot of bananas ripening. I knew I had a plan for them, but I suspect others were worried they would all go bad. To keep good faith - I set to work baking.

I made Banana Oat Bars (recipe to follow), made two more batches of  Fudgesicles, and then had a brilliant idea. I took a doubled recipe of the fudgesicle, doubled the vanilla and put it in a graham cracker crust. 

Then, I decided I needed to figure out a way to FINISH this monster zucchini.  We've been working at it for 3 weeks.  Look at how much was left!!!! I decided I needed to make it the basis for a meal.  It was yummy - recipe to follow.

I also made Baked Green Beans "Fries"....and they were wonderful with the Chick Fil A Sauce. LOL

Yep, spent all day cooking and doing laundry.

WHO ARE THESE PEOPLE

I've needed new plates for quite a bit of time. I'm cheap frugal. I refused to buy plates in Japan I didn't totally love.  The kids did buy me some which I've decided are special as they are from the kids and from Japan. I use them and my set of 4 Polish pottery together. I still needed every day plates.

I wanted fiesta ware - but for 20 years I've not been able to bring myself to buy them. These from Walmart make me smile. I bought mixed colors. I like varied colors at the table. I like to see the plates sitting in the stand - all mixed up. I suppose I love diversity, spontaneity, chaos....but alas.....I load the dishes, put them away and they just magically sort themselves into matching colors. Every single time.  I even grab a couple of each color to set out for dinner - but if it's Zander's week as kitchen helper - he puts them back and sets out matching. The others will let me have the pleasure of chaotic dinner plates, but sort them when they put them away.

I'm surrounded by a group of matchy-matchy OCD types. I noted this last Christmas when  they dumped all the M & M's on to the table and began to sort them into colors before they ate them. Who ever?????

I suppose I should give up. It's a gift to Zander (and the other matchy-matchy Gherks in the house) to leave them "properly sorted."   He likes structure and order. I just hope they read this and maybe one day month give in to MY need for chaos, color and diversity. LOL

I Get Crafty! Who knew?

I was baking at 0430 - it was that kind of day.   The kids were hilarious when they staggered into the kitchen. I should probably bake first thing in the a.m. more often.  Of course, baking meant I didn't get a work out in.

I FORGOT until about 30 minutes ago that I still needed to bake an Apple Crisp. I'm not sure it will get done.

No, it's not all for us.

I took muffins to MTOC (MOPS like program) this a.m.

We are taking dinner to a new mommy tomorrow so the brownies will go to her - with a spare pan for the Gherkins.

Our Bible study has breakfast tomorrow and it looks like our numbers will be low so the rest of the baked goods and some fruit will go to Bible study tomorrow.

I left home at 0830 (running late)  to make it to base for MTOC (Moms of Tots of the Chapel).

Today's topic was the importance of hospitality. A fun topic. We shared recipes too.

Back at home I worked on another project - a work of love. For real. I'm not crafty....but when we made little pendants with the PWOC year's theme for the  Fall Rally, I began to think of other ideas.

We were looking for a farewell gift and I saw pendants on pinterest of maps. Perfect. I envisioned a joint work day or someone else crafting - because - again - I'm. not.crafty.  I failed at MOPS crafts - every month - for four years.

BUT I took it on. First I had to find a map which showed Beale AFB and was colorful. Google and MapQuest are NOT colorful.

We stopped at several stores and gas stations - they don't sell maps anymore.

Finally, we bought an atlas...for a 1 inch section. ::snort:: I scanned it in to our computer, took several screen shots, and began experimenting. Michael came home and adjusted the color and I was much happier with them. The supplies purchased for PWOC haven't arrived....so I used my supplies. I made one with a map of Japan first as a trial. The cords haven't arrived but we needed a couple for tomorrow - I raided my jewelry box. LOL 

See the one on the bottom left? THAT'S what happens when you get diamond glaze on the front of a tile and lay it on paper.....sort of like the wreath I epoxied to our counter a few months ago.  I also have strong-as-nails coating on my fingers and fingernails too. ::snort::  Yes, works of love - and I'm happy with them and happy to have made them for gals who have blessed our group.

Arielle babysat today. She got home about the time I was done with my craft and some advertising stuff for PWOC. We raced to Walmart for a few items we need for tomorrow.  Tomorrow promises to be busy too  - it's PWOC Wednesday and Family Bible Study. 

I've not scheduled our core subjects for next week. We'll use Mon - Wed as catch up days. I'm glad that's how we scheduled things given the past couple of weeks.

We had dinner, Arielle left to baby sit for a local church's small group....and I'm ready to call it a day.....

PWOC is Protestant Women of the Chapel and is our chapel's (and many chapels around the world) women's ministry.

Copy Cat Chick Fil A Sauce (Vegan Option)

I googled and found this at Stockpiling Mom's website.  I think the taste of this will vary depending on your mayo and BBQ sauce choice. I made my BBQ sauce.

Ingredients
  • ½ cup Mayo (Veganaise)
  • 2 tsp prepared mustard (I assumed yellow)
  • 1 tsp lemon juice
  • 2 tbs honey
  • 1 tbs smokey BBQ sauce
Instructions
  1. Whisk all ingredients together.
  2. Enjoy!
