WONDROUS WEDNESDAY

~Breakfast made (eggs, muffins and pancakes) - Day 3 of school went WELL.

~Weigh In - YIPPEE! I've lost all holiday weight and two more lbs besides....another bike ride this a.m.

~We got the outside lights taken down today. I wanted to do it TODAY because we are supposed to be getting another cold snap. I didn't take into account the 25 mph winds. Yikes. (Photos to follow)

~Adrienne called and invited us to the park for an hour or so. I made up meat loaves and a quick salad, got Stacia down for a nap, picked up Ashley (Arielle's friend) and we headed to the park. Jamin watched Stacia and I had the cell phone if she woke up.

~Received two PBS books. "Revenge of the Wrought Iron Flamingos", is in a new series I want to try....and "Keeping Our Children's Hearts" by Steve and Teri Maxwell.....unfortunately, this book is in BAD shape. I felt rude commenting on it and after I have it a few years it may look like that anyway. Adrienne, this is a book you can borrow and read in the bathtub. ::snort::

~Dinner - We actually have enough in our pantry to survive for several months, I think. ::snort:: We're only going to be running out of things like milk and eggs. LOL I was so glad I had the meat loaf ready to throw in the oven when we got home. I LOVE my french fry slicer attachment for the Bosch. I am using the SAME recipe for oven baked fries but now my youngers are gobbling them up. I made fries for them and roasted red potatoes, carrots, zucchini, celery and red pepper for the rest of us.

~We all decided that "King Arthur" simply wasn't working for us. Maybe in a year or so. The biggest drawback of the book is that *I* keep falling asleep within a page of starting the book. ::snort:: The children had quite the family council going to pick a replacement. We began "Jungle Book" tonight.

Carlos took down most of our lights today too. He still has the lights on the second floor to come down . . I can't wait until it's all finished and put away :-)

Another great day for you! Great job keeping up the bike riding.

We just finished Jungle Book tonight. Gabe really enjoyed it. Not sure what is next...we are waiting on Peter Pan from PBS.

I understand about fitting in exercise around the family schedule. I do the same w/Curves. You are doing wonderful getting out in the cold to ride. Congrats on the weight loss!

There are several other excellent books (children's classics here in the UK) on King Arthur when you are ready to give him another try!

Rosemary Sutcliffe's arthurian trilogy and King Arthur and the Knights of the Round Table by Roger Lancelyn Green are my recommendations!

I love the postivity you are going for in your titles and entries this week. Good job!

Every single one of my kids will eat this! Now that's saying something.LOL


Cuban Black Beans and Rice

4 ounces bacon or 5 tbsp spanish olive oil
1 med onion chopped
1 med green pepper chopped
2 cloves garlic, chopped
1 cup dried black beans soaked or 2 16 ounce cans black beans undrained
2 cups raw white rice
4 1/2 cups water
2 tsp salt
1 bay leaf
2 tbsp spanish olive oil
1/4 tsp cumin
black pepper to taste

In a large sauce pan, cook bacon over low heat. Add onion, pepper, and garlic cook till tender. Add remaining ingredients and cook over med-high heat until all water has been absorbed and small craters form over the surface of the rice, about 10-15 mins. Stir with fork, cover, and cook over low heat 10-15 minutes. Discard bay leaf and serve. Makes 8 servings.

This and a salad is a meal in it's self. As I've said, many of the ingredients can be left out and it will still be very good. My kids don't like bell pepper so we never put it in and sometimes I just don't have any bacon and it's good too. LOL Enjoy!

Sis: Congrats on the weight loss. I have not lost since last May when I wqas sick one week and lost 10. Now I'm stuck again and waiting for w-loss, You know it comes automatically! :):):)

Beautiful weather today. NO SCHOOL! COLD! BEAUTIFUL! BEAUTIFUL! BEAUTIFUL!

Hoping for no school again tomorrow and then it would be 5 days no school and just think how much I could get done.

I still have all my many nativities up and don't really want to take them down other than the fact Dad needs room in the garage to move around. :( He has a DEXA SCAN today to see if there is some reason for the way he is healing up. Then Monday he sees the bone doctor that operated..etc.

Wish you and the G'Kids were here to enjoy this day with us!!

Yep, it's the only bean recipe that everyone in my family will eat. We make it about once a month here and it's Jon's favorite dish to make for us.lol
