Banana Chocolate Cream Pie

A dessert without any guilt whatsoever - AND it's nutrient DENSE.  This is adapted from Fuhrman's Fudgesicles.
Ingredients:
4 ripe bananas
2 C cashews
6 T nonalkanized cocoa powder
2 tsp vanilla


Directions:
Blend until smooth.*

Pour into crust.

Chill 2 hours.

*If you don't have a vitamix, puree the bananas first, add cocoa, vanilla and blend. Add cashews...and blend, blend, blend.

I was a bit worried it wouldn't set up.....as I didn't freeze it...but it DID.  Now - it's not a Chocolate Cream Pie....but it's sweet, sugar-free, oil-free, dairy-free....and loaded with NUTRITION.


Zander wouldn't try it.

Nolan, Arielle and Stacia had seconds - and I didn't mind if they did. LOL

Michael said it was, "alright but not Chocolate Cream Pie." He suggested some whipped cream would make it much better....and it would.

I thought it was wonderful - rich - I couldn't finish it. Putting whipped cream on it WOULD be yummy - but would negate the nutritional value of it - I'd have to limit slices if they add processed sugar and dairy. LOL

This will be Arielle and my Thanksgiving Dessert. ::grin::

Zucchini Something or Other

We had a giant zucchini to finish using.  This turned out yummy and so I'm capturing it.


Ingredients:
Zucchini (or other squash)
Onions
Mushrooms
Garlic (2 - 3 cloves)
Bell Pepper
Sun-dried Tomatoes
1 T Italian Seasoning
2 tsp Fennel Seed
Sliced almonds
Nutritional Yeast

Marinara Sauce

Directions:
Half and scoop out the very large seeds.

Sauté the onions, garlic, peppers and mushrooms.  You can use whatever veggies you have and simply use what you need to fill the Zucchini.  I topped with sun dried tomatoes and sprinkled with Nutritional Yeast.

I think beans and/or rice would work too.

Sprinkle sliced almonds over the veggies - toasted would be yummy.

Finally, cover  with marinara sauce and sprinkle with more nutritional yeast.

I baked for 350 at 30 min (as that's what the meatballs needed), then I baked another 15 min at 425 - as that's what the Green Beans needed. I need to figure out the baking time. LOL

Stay At Home Thursday

I LOVE DAYS LIKE THIS. I got to be a STAY AT HOME Mom today! ::snort::  All day long.

I was just getting ready to work out when Stacia said, "Mom, let's sit in the hot tub."

We did.  We sipped tea and ate apple slices and sat in the hot tub. We got out and spent to long talking and were cold - so we got back in again. ::snort::

I've had a lot of bananas ripening. I knew I had a plan for them, but I suspect others were worried they would all go bad. To keep good faith - I set to work baking.

I made Banana Oat Bars (recipe to follow), made two more batches of  Fudgesicles, and then had a brilliant idea. I took a doubled recipe of the fudgesicle, doubled the vanilla and put it in a graham cracker crust. 

Then, I decided I needed to figure out a way to FINISH this monster zucchini.  We've been working at it for 3 weeks.  Look at how much was left!!!! I decided I needed to make it the basis for a meal.  It was yummy - recipe to follow.

I also made Baked Green Beans "Fries"....and they were wonderful with the Chick Fil A Sauce. LOL

Yep, spent all day cooking and doing laundry.

Sugar free dessert - they ATE it and I felt good about it....bananas, cashews, vanilla and cocoa
