Camping Meals?

In looking ahead to our vacation I'm wondering what I can do for food. We are staying away from many things.....and we are doing things from scratch so Denty More Stew isn't going to cut it this time...nor is bacon and eggs in the a.m. {g} I've been told by a "reliable" source that turkey bacon looks like dog treats! :::snort:::

I'm open for ideas. At this point I'm making and freezing muffins and buns for the trip. I'll have a loaf or two to take with us too. But we'll have to buy some along the way as traveling with a ton of produce and fresh baked bread stuffs doesn't work real well. I need to order some produce from co-op this time because we are nearly out of everything....but I need to be careful so we don't have a ton of stuff left when we leave.

Breakfasts:
Granola, oatmeal, eggs, biscuits (bake ahead? Dutch oven?) muffins, fruits, pancakes

Lunch:
Sanwiches, salad, fruit, pasta

Dinners:
Salads, fruits
Maybe some freezer meals I can thaw and heat (spaghetti, soups, grill some burgers, steaks, foil veggies)

What do you all do with a Dutch Oven? What do you all have when you go camping? How am I going to do S'mores? I guess I better get looking for some marshamallows without artifical flavors and such...Jodi sent some vegan links but I don't think I'd get them in time....I'll have to check the healthfood store here....

Snacks:
fruit, carrots, granola bars, cookies baked at home, I still have some Annie bunny crackers - in fact havent' opened any of them - they would work for snacks....

Ideas????

De'Etta, I have already figured out we can do s'mores. Squirrel's Nest has marshmallows, and the food guide has chocolate and graham crackers. We've bought New Morning Graham crackers. So, unless it is nonFG stuff that you are avoiding, you should be set for that!

I have been thinking over FG camping menus as well! Your list looks good. I was thinking boyscout stew, sandwiches, etc.

Let's see.....does the health food store have "good junky stuff" lol. Is there such a thing?

Some things we do for dinners. I always make and freeze sauce and meatballs. We make garlic toast over the fire with bread, butter and garlic powder or fresh if I remember to take it. Make and freeze soups.

I get those 9x13 foil pans and heavy duty foil. You can bake lots of stuff in there. I always chop potatoes, onion, peppers and drizzle oil on it. Cover really good and put in the coals. Or over the coals if they are too too hot.

Steam corn. Do ya'll have corn on the cob yet? Probably not LOL. But soak it in water with the husks on for 30 min. or so. Then toss them in the coals straight from the water. Pull back the husks and eat. YUMMY!

We make foil packets with chicken, peppers, onions, potatoes, butter. Fold and bake over the fire turning every so often.

We have pancakes for breakfast. You can mix up all the dry stuff and put in a container with a recipe for what you need to add.

Turkey bacon, imo, is yucky, at least what I've tried. But we love turkey sausage. Is that an alternative you can use?

I'm not sure about s'mores. The kids made s'mores at their party yesterday and I sneaked 1/4 bar of chocolate. I think that will be my limit LOL. But it was good.

OK, that's all I can think of off the top of my head. I've got to say I am jealous of your camping trip lol. We are far, far from camping since it is 25* here right now. It will be 50* today *g*.

Yes, Kelly, I'm discovering that those "health food" folks have as much junk food as the non-health food folks. {G} We are avoiding as much processing as possible...healthy or not.

I didn't get any marshmallows or chocolate ordered from Squirrel's Nest. I do have graham crackers coming on Monday in my Shop Natural order....I thought I'd find all sorts of Palmer chocolate I could use but Wal-mart and Sam's are out and Hershey's has vanillian....so I may have to simply use Bakers chocolate or something. Some of my kids thought it was strange anyway to melt a bunny on the s'mores. {G}
