SCONE MESS OF A DAY

 I was up at 0500. It's now 10:26 pm (2226).  I thought it would be a great idea to get as much done as possible today for tomorrow night's Women's Ministry launch. 

Before I began any of the local projects, I did take time to check in with Bible Babes as we've begun a new study. 

I began baking scones. My oven is downstairs as the upstairs oven is still not here (a very long story).  The tasted good but they all listed to the side. I did NOT turn the cutter - straight down and up. Someone told me to place them on the pan so they touch - like cinnamon rolls - this was to make them rise up - instead of over...and it did...but they aren't as flakey. The texture is different. I may make more scones tomorrow and I'll have a zillion ugly (ok -  only 3 batches), listing, imperfect scones to eat here through the winter. I double wrap and freeze them. 

The blueberry muffins turned out well. 

I also got GG breakfast, spent an hour in the garden, and did a mountain of laundry. 

When I took Allie to work, I went ahead to the church to "do all I can do today...." I set up tables, decorated a bit...couldn't make the copies I needed to make....but made a good list of what I still needed to buy or bring from home....

I walked in the door, and it smelled wonderful! Stacia made chicken divan and a salad for dinner. I love having young adults. 

After dinner - not realizing I didn't like the texture of the first batch of close together scones, I made two more batches....pumpkin spice and plain...and placed them close together so they wouldn't list to the side. Y'all I follow all the tips...grate the butter, massage in the butter, round cutters...but this close together thing - I'm just not sure. I may just let them list. ANYWAY, while I waited for them to come out of the oven, I shared with Michael I thought I'd go do shopping for tomorrow night and Thursday night's event at 11:30 p.m. He asked to please go to Fred Myers. I had an hour - ran to the store, rushed through the store and got done before they closed.  His concern was things are a bit sketch around Carrs at midnight. 

The thing is I waited and pulled the scones out of the oven, and I ran off to the store. They were too hot to handle, and I didn't give it a thought. Um...it appears they should have been separated when they were hot. They cooled and I have a lovely pan of pull-apart scones.  I'm thinking more baking in the a.m. and I'll either,  ::shudder:: cut them into triangles like Americans DO...or I'll let them list delightfully to the side. Because they are SO flakey and yummy when I don't smash them together. I'm fairly certain the listing thing is why American's cut them in triangles....my triangles don't list...but they seem to be more evenly cooked in a round. I think I'm crazy. 

That will be tomorrow's project. 

No, not a single picture. I've been too busy today. I did take garden photos. I'll do that next and then hop into bed and start over tomorrow.

Berries and Eggs

 We could not believe how nice it was today! No rain. 63 degrees - the forecast now shows no highs for the next 10 days out of the 50's.  We plan to work this week on buttoning down the garden and yard for the fall.... but TODAY...I PLAYED. Michael and Alex liked the idea of staying home with GG more than playing on the mountain. Nolan and Allie ended up both being too worn out from work during fair week to want to go play.  I thnk both actually worked on college. Stacia, Millie and I went Berry picking with Jamin. 

The drive up, the morning in the mountains, confirm beyond a doubt fall has arrived in Alaska.

We found a spot where there were still berries - off the beaten trail a bit - and settled in to get berries.  Jamin pointed out it's a good summer in Alaska when you get harvest blueberries and salmon. We're blessed. 

We found while the bushes were picked over, if we looked low on the bush, we found more berries. This is later in the year than I've picked before, and I noted when the bushes are yellow one simply places a hand under the berries and the fall into your hand.  We picked nearly 2 gals between us...next year I want to go up earlier and go several times. 

I am wondering if this red berry is high bush cranberry. I could have picked gallons of them. I almost did, but Jamin thought I shouldn't on the off chance that it would kill us to eat them. I need to go with someone who really KNOWS the foraging scene in Alaska. LOL 


We got home about 1:30 p.m. Spending the time on the mountain was refreshing and just what I needed. Stacia got up early and did school before we left, when we got home and between evening events. She refused to get "behind." 

I had enough time at home to touch base with Michael, Nolan and Allie and to make Dad lunch. Stacia and I tool Allie to work...

We headed over to a young family's home for Stacia to spend time getting to know their kiddoes. I enjoyed sitting outside with a cup of tea and visiting with Joelle, their mom. Stacia looks forward to watching the kiddoes in the future. 

Nolan had offered Michael and I  two fair tickets and a parking pass. Michael was willing to go if I wanted to. He wasn't EXCITED about the crowds. Nolan and Stacia were home and determined the two of us go out somewhere and they would get GG dinner and stay with him.  In the end we decided to drive around, take roads we've never taken and eventually get dinner. I was a bit surprised when he pulled the car to the side of the road and told me to get out. WHAT? 

 He'd seen a beautiful rainbow in the rearview mirror. 

Earlier in the day, as I dropped off Allie, I received a text from Nora that said, "I see you." 

Sort of an eerie feeling. I looked around, wondered and confirmed she was at McDonalds. 

Now, we got back in the car, and I got a text from Jacque saying, "That's a beautiful rainbow you're taking a picture of." 

These encounters were GREAT. Connections. We are connected enough to be known when we go out in our community. We love smaller town living. We felt at home, at peace, we belong. 

From here we drove down several roads we've wondered about...and found a gorgeous Salvation Army camp on a lake...we thought we were probably close to John and Jacques new home...popped it in the GPS and we were 3 minutes away....so yes, I sent her a text that said, "We see you" as pulled into their drive and surprised them. 

Qdoba's was our next stop and then we came home to find the kids playing Mario something or other in the living room. 

Michael took care of critters. He suggested I go to bed - and I did. I'm assuming he got GG to bed and picked up Allie. ::snort:: 

Look at this! 15 eggs today. The crew from 2020 were simply not good egg layers. I had picked them out of a big box at the local feed store. I've learned. This year 1/2 of the chicks we ordered were from breeds known to be good layers. I'm done taking my chances. Two and half years of feeding 16 hens and getting 3 eggs a day - on a good day. LOL We now have 20 hens and got 15 eggs today. Yes, this is a better investment. Local friends may well begin receiving eggs on their doorstep. LOL  Most the eggs are still pretty small, but a few are getting up to the 2 oz size. 

It wasn't our normal Labor Day - but it was a great day nonetheless.

Weekend Glimpses

The weekend is concluding, and I've not blogged.  Here are some shots from the last couple of days...in the order blogger threw them up. LOL 

The girls invited me to a spa night. Saturday night we did feet, face and I repaired a nail or two...while we streamed a fun show. I didn't realize these masks were in the shapes of ANIMALS...

 

I spent considerable time on Friday and Saturday writing a newsletter, making a fall launch slide, working on a brochure...getting ready to kick off a new ministry year. 

It's fall. The temps are dropping. The leaves are changing.  Arielle introduced me to the idea of SLIPCOVERS for pillows.  It's been fun to have some slipcovers for spring, summer and now fall. I set out candles. I have NOT set up the fall tree, or the outside decor. I'd like to get a better handle on harvesting the garden before I do that. 


I made some blueberry scones. I'd like to make some pumpkin spice and maybe something else before the fall launch. Frankly, I like to make this size and keep them in the freezer. Then I can grab one out and heat it with a cuppa chai when the mood strikes. These were a bit gummy - not sure if it was the blueberries or the sour cream. 


Church was great today. We were able to pick up a young man and give him a ride. It was great to have him in church again. His enthusiasm is contagious. We hope he's comfortable to let us continue giving him rides.  The sermon was wonderful...with lots of takeaways to ponder. 

GG fell coming out of church. That always adds excitement. He ripped a chunk of skin off his finger and the blood flowed freely for hours afterwards. 

Jamin and Jared hiked the peak. They took Jared and Larissa's dogs. Lassie got a bit tired, and Jamin carried her down. Check out the colors at the top of the peak. Jamin reports there are still berries, but the fireweed are done.

While tomorrow is a holiday, Stacia is determined to do school. We have plans to break and do some berry picking and to break and go visit a young friend's family so Stacia can begin watching her kids for her from time to time.  She was still insisting she would get school done.

FRIDAY!!!

It did not rain today!  

Michael and Alex went out for their lunch study. Michael stirred the peanut butter - which we GREATLY appreciate.

I left for a bowl of amazing mushroom soup with a friend while the girls were discussing a run. They made it out.

There is snow on the tip top of our mountains - again. It first hit early in August and has been coming and going with the rain. I suspect we're going to have less rain and the snow is going to stick, soon. The fireweed is all dead. 

More and more leaves are turning yellow and I'm ready to concede to the season change.  I'm NOT ready to put up the fall tree. Last year it was up from Sept/Oct - May.  I'll wait until it's dark enough that I MUST have the lights on the tree. 

While the guys were out, the girls finished school and GG napped, I spent a few hours working on paperwork stuff for women's ministry. I worked on a newsletter and a brochure for next week's fall launch. 

Dad does a thing.  He ALWAYS asks for seconds or thirds. Always. It doesn't matter if we put four pieces of pizza on his plate, he will ask for more. This holds true with any food. I have told the family to resist giving him double to begin with as he will ask for seconds. I forgot to start him with a single serve this evening....and sure enough, after eating a plateful of pizza he stated, "I'll have one more." 

Michael surprised us all by bringing him back a sticky note with "1" on it. Dad WAS laughing before I got the camera. LOL 

After dinner I found this note on the fridge. It could have been from Michael, Allie or Stacia...I tracked it down. It was from Allie.

It's a race to see if any of the pumpkins will mature in time. I guess I need to start them earlier next year. Yes, I KNOW there is a 2000+ pound pumpkin at the fair...and mine could be too if I heated a greenhouse,  slept with it, played classical music for it and gave it a daily milk bath. ::snort::  It's not been a good year for our squash. We should be OVERRUN with squash - several varieties. We are eating lots, but certainly not overrun. 

I planted Scarlet Nantes and these New Kuroda carrots this year. We've been eating the Scarlet Nantes and they are good...tonight I picked a couple of the New Kuroda to see how they are doing. They are much darker in color and have a sweeter taste. We'll continue to let them grow until we've eaten all the Scarlet Nantes...and maybe we'll have some to freeze.  I'm debating starting more in the greenhouse and seeing if they will winter over and come up early spring next year.  I plan to start some greens in the greenhouse now and stretch out the season with baby greens. 

It IS a great year for mushrooms! 

Michael and I joked about the girls. They finished their respective school for the week and spent the afternoon in a writing competition.  They continued on after dinner. Michael and I went out and started a fire. The girls came out. This left GG alone and he makes poor choices when alone. Michael went back up and started a James Garner movie for him. That worked for a bit of time. 

We fought off midges, watched flames, talked, and made smores.

Yes, we ARE burning a broken pallet and the end piece of the old compost bin,,,I'm told that does not make us rednecks. I went in when the view from the window showed it was time to go back to GG. 
We love these girls and their individuality! 

I did warn the girls not to tip over the playset. The grands would not be happy with them if they did. 

We ended the night with an episode of Monk. We headed to bed and a few minutes later there was a tap on our door. The girls were having a spa night and invited me down. It was so very tempting, but I opted to crawl into bed instead this time. LOL

It's FRIDAY and we have a long weekend ahead of us. We have no plans...except to jump outside for various projects in between the rain. We don't have a great push to visit the fair this year. Maybe, maybe not.

Allie has finished her second week of college. No, I don't plan weekly updates at all. HOWEVER, maybe this once....

The new work schedule works well with her added classes. She enjoys being able to volunteer with youth as well as attend life group. She is still working 27 hours a week.  She has 4 days "off" each week for school, life and family. 

I don't know that we blogged about Allie's college changes. It turned out the program the University of Northern Colorado ACCEPTED her into (ASLEI) is only available if you ENTER with 30 liberal arts credits. Through no fault of Allie's, the college's admissions department had put her into an upper program and listed her as a residential student. She began calling this to their attention in April.  To further complicate matters the UNC doesn't offer liberal arts credits online. This is beyond odd as we have discovered those are the FIRST credits most universities offer online.  Allie had to switch gears in June and figure out how she wanted to get 2 years of liberal arts credits and more college level ASL before applying once again to their ASLEI program. Options were presented, discussed and discarded...local college, residential in Colorado, online....we offered up the three online programs often used by military members....Wayland Baptist, University of Maryland and Liberty University...because we knew they are accredited and accepted in the educational community. We also knew all 3 online programs have been around for decades and have their programs and best practices in place.  In June she made SURE she was switched at UNC from residential to online student, and planned to take only ASL with them, and re-apply as a transfer student after she has the 30 liberal arts credits. I was part of these zoom meetings and KNOW Allie told them repeatedly about this issue starting in April when we realized the mistake had been made.  We did not know about the requirement for 30 liberal arts credits until July, because they had ACCEPTED her into the program.

Allie explored her options. She chose Liberty University. Liberty was amazing....their process is streamlined. They knew exactly what she needed to do. They had the financial aid and entire application process finished within 3 days. 

Allie planned to take an ASL class at UNC as she'd already tested into the class. She is taking 12 liberal arts credits from Liberty University. 

Fast forward to THIS WEEK when Allie received another notice from her advisor at UNC that she was listed as a residential student, and SHE needed to take care of this before she was charged residential rates? WHAT???? I saw the paperwork, I was on the zoom with this individual and two others when Allie told them all she had withdrawn from residential, was going online at Liberty and would take one ASL class from UNC.  She did all they told her to do, THEY SAID IT WAS TAKEN CARE OF....but here we were in August STILL dealing with the issue we began bringing to their attention in April.  She called registration and was told the very lady sending the email needed to fill out a specific form to switch Allie. There was nothing Allie needed to do. She called the advisor back and let her know she needed to turn in her form before Allie could be switched. 

Meanwhile there were some concerns with the online ASL class Allie had started. This combined with continued inefficiency and drama at UNC led Allie to drop the ASL class at UNC. They finally apologized for the crazy mix ups and said they welcome her applying again in a couple of years. 

Allie will continue her ASL studies locally and when she reapplies for the ASLEI program she will be able to test for placement again. No loss, she'll test even higher, I'm sure.  They will have 2 years to work out the kinks of their hybrid program. One kink was that the link to register as an online student funneled you to a residential program. LOL  It all escalated from there.  

How has the first two weeks gone for Allie as a Liberty student? She made 100% on her first assignment - a screen writing class.  She has made 98 - 100% on all assignments and quizzes. She's loving the class material. She is thriving in the discussion boards required for the classes.  She is home more often and continuing to work 27 hours.... it's all coming together. 

AND - she was awarded a $1500 scholarship from the National ASL society to be used towards college. I think this means her second semester is covered....and saving has begun for the summer semester.

A Beautiful Fall Day

The girls and I went out for our breakfast study. We are out of If:Table conversations and haven't started another study yet. I took other conversation cards, and we also discussed the fall schedule.  Allie and I will meet alone on Thursdays. Stacia and I will meet alone early Friday morning - we plant to hopefully be back before GG wakes up. We've enjoyed the past 2 months meeting together - but there is something precious about one-on-one time too. We'll probably mix it up this year. We'll see....but this is how we'll begin. 

We got home just as Arielle and the boys pulled up. They needed to get out of the house...and we are working at our place becoming a known and safe place for Little Buddy.  It was fun to see them. We played with playdough, visited loudly with GG, had snacks from Bachan's basket (z bars purchased for grands), the little guys perfected their duet and then they did many laps around the house. The went home tired and ready for naps. I hope.

At some point Danny wandered away from the keyboard. Little Buddy continued to play with me...and even snuggled in and took my hand to play. I felt it a personal win.

Well, GG GOT his paper.... but it is still far too wet to read. I called and they'll credit him a day's paper. 

We had lunch. I visited with Nolan. GG went down for a nap. Michael ran to Spenard's and Lowes, the girls and I ran to get our eyebrows done, Alex got home from work as Nolan left for work and they transferred GG oversight...Yes, I do sometimes feel like those kids running around and around and getting nowhere fast...but expending lots of energy! LOL

When the girls were done with school - afternoon tea magically appeared on the table...tea and scones. It's time to bake some more tea treats for the freezer. It was POURING rain and we talked about hygge, embracing the season, how much the girls are enjoying their classes, and I bounced a few women's ministry ideas off of them. 

Allie went to work on chores, Nolan went to work, Stacia trained and played with Millie, Alex played video games, Michael installed an outside motion detection light, and I made Potato Cauliflower Cheese soup for dinner.  Mom Mary was right - candlelight really DOES make everything nicer. 

I think we'll either read a chapter from Inkheart or watch a video clip....we shall see.  Millie continues to pout about Stacia's divided attention this fall. I swear she's part human. 


Honey Mustard Salmon (Air Fryer)

Josiah sent a quick message one day shortly after fish camp 22.  It included a photo of a yummy looking piece of salmon....7 minutes in the air fryer.  WHAT? 

I knew I needed to try this...my doc would like me eating salmon at least 3x a week, red meat once a month and chicken the rest of the time. The rest of the family gets tired of salmon that often. I don't like to cook a huge batch and eat the same thing day after day...but if I can put one fillet in the air fryer and have it done in 7 - 10 minutes?  That's EASY to do when the family is eating something like pork loin or beef roast. LOL

The technique is simple. 

Pre-heat your air fryer by turning it on to 400 for 5 minutes if you don't have the pre-heat option. I don't. 

Turn heat to 390 degrees or leave at 400.  Recipes vary. 

Spray or brush a bit of olive oil on the fryer. 

Season fillet. 

Place skin side down and air fry for 7 - 10 minutes depending on the thickness of the fillet. (Josiah said his took 7 min, but OURS take 15 min or so being so much more massive than his salmon - evidently. ::snort::)  ::wink::  7 - 10 min. 

That's it. I've done it plain and with lemon and onions. I've sprinkled Old Bay on the salmon. I've brushed mayo and spices on it.  Tonight - I did this combo. 



INGREDIENTS

Salmon fillets (about a lb)

2 T honey

2 T Dijon Mustard

1/2 tsp garlic powder

1/4 tsp smoked paprika

1 tsp lemon juice

salt and pepper to taste


DIRECTIONS

Combine sauce mixture.  (Either marinate in 2/3 of the sauce, or brush sauce on salmon)

Preheat fryer. 

Air Fry 7  - 10 min. 

If you chose to marinate, drizzle the remaining sauce on the salmon before you serve. I didn't marinate this time...just brushed it all on top and Michael and I really liked it.
