DINNER ROLL CALL

OK - help me out here. I've gotten into a rut. I would love it if lots of you would simply post a week of dinners and/or lunches from your house. OK - if you are also in a rut and don't want to admit what you've had for dinner in the past week...how about you make up a DREAM week and I won't even make you title it "dinners for a week - in my dreams"! :::snort:::

Don't worry about your dinners fitting our eating style...I have learned to adapt most recipes to our new lifestyle....unless of course it has pork or deep feeding fish or shrimp.....

OK I'll get you started....Dinners we've had in the past week or month or maybe even year {g}

Manicotti
Baked Chicken
Lasagna
Pasta with Asiago cheese/chicken breast
Grilled burgers/steaks

I'd love to hear from Jodi - my vegan friend...and Adrienne and Heather my healthy friends...and Becky my healthy friend with young kids who EAT Quizno sandwhiches without picking out the tomatoes and lettuce......

Well, De'Etta, I don't know how healthy this is, but here goes :)

Dinners on my plan for the next 2 weeks or so:

Grilled Talapia with Grilled veggies and brown rice

Sauce & meatballs, pasta, salad, bread

Jordan's favorite chicken and rice bake
veggies
oatmeal dinner rolls

Italian pot roast (oven, stovetop OR crock pot!) with egg noodles, carrots, potatoes and onions

Red beans & rice, cornbread, salad

Grilled turkey sausage links with peppers and onions, baked fries, fresh fruit

Montage Bay chicken, rice or noodles, veggies

Venezulian black beans and rice, cornbread

Salmon patties, boiled potatoes, cornbread & beets

Grilled pizza

Honey marinated chicken tenderloins, rice or fries, salad

Burgers on the grill, baked fries, veggies

Brown sugar topped salmon, rice, sugar snap peas, salad

Herbed BBQ Chicken, corn on the cob, salad

mini tuna loaves
noodles and veggies

Easy hamburger soup, bread and salad

Meatloaf, baked potatoes, veggies

Chicken tacos

Chicken taco soup from leftover chicken tacos

BLTs, corn on cob, salad and fresh melon

Lunches are leftovers, salads, mac & cheese, frozen pizza, corn dogs, anything they can make themselves

Breakfasts are cereal, bagels, toast, frozen waffles or french toast sticks, hot cereal, again, anything they can make themselves.

I like to make a variety of dinners, but there are our favorites that we seem to have over and over.

So if you want any recipes, let me know and I'll post them on my blog.

These are some of our favorites:

Mexican Skillet Chicken

Sprinkle chicken with 1-2tsp of chili powder and salt and pepper.
Cook in oil til done. Cut up. Add 1 can black beans(rinsed), 1 cup corn (drained), and enough salsa to make a little sauce. Heat to boiling, reduce heat and simmer for 5 min. Eat in tortillas or over nachos.

Pepper Steak Oriental

1 lb steak, sliced thin.
3 tbsp soy sauce
1/2 ground ginger
1 tsp minced garlic
1 green pepper, sliced thin
1 cup fresh mushroom, we like baby portobellos, sliced thin.
1 onion sliced thin.
1/2 tsp crushed red pepper.

combine all in crockpot or cook steak, add veggies and then pour sauce over top and cook til tender.

I don't know if you've ever been to www.thefamilyhomestead.com but Crystal has a homemade hamburger helper that is good. She has a lot of made from scratch recipes that I've made and liked.

Here's the recipe:

Homemade Hamburger Helper Mix

2 cups powdered milk
1 cup corn starch
1/4 cup chicken bouillon powder
2 T dried onion
1 tsp basil
1 tsp thyme
1 tsp pepper
2 T dried parsley
1 T garlic powder

Mix all and store in a jar.

To use:

brown 1 lb hamburger
add 2 cups water
1/2 cup helper
2 cups noodles
simmer for 15 minutes or until noodles are tender
Add 1/2 cup sour cream.

She actually has 4 different recipes for using the mix so check out her website.

I'm on a low-carb diet, so my menus are low in carbs and I'm not afraid of meat or saturated fat. Most meals include sauteed fresh vegetables and/or salad but only rarely a starchy side dish. No one goes hungry.

This week:

Alfredo beef and broccoli bake (ground beef, frozen broccoli, jarred alfredo sauce)

Corned beef salad rolls

Pizza (homemade)

Beef pot roast in crock pot with barbecue sauce

Teriyaki steak (beef for london broil marinated in teriyaki sauce and grilled)

Other favorites:

Beef with cabbage (ground beef, tomato sauce, shredded cabbage)

Hamburgers

Kielbasa & cabbage

Burger scramble florentine

Cheddar broccoli salad

Chicken--baked legs; slow cooked legs with bbq sauce; teriyaki-marinated breasts, grilled

Stir fry (usually chicken)

Country sausage skillet (bulk sausage browned and topped with shredded cheddar)

Crustless spinach quiche

Ellen's Noodleless Lasagne

Italian sausage (often with low-carb spaghetti)

Fresh catfish (dust with Old Bay seasoning and fry in butter)

Pork chops

Lamb chops

Steak on the grill

Taco salad

Tuna casserole/tuna muffins

We also love this:

Baked Salmon

Put Salmon in a glass dish. Sprinkle with Soy sauce, minced garlic, and ginger powder. Bake at 350 for about 15-20 min. Enjoy!

Tilapia

1 1/2 cups butter, melted
2 tsp minced garlic
1 tbsp worcestershire
1/4 cup white wine (I use water)
1/2 envelope Italian dressing mix
Juice of 2 lemons
4-6 tilapia fillets

Combine all ingredients and pour over fish. Bake at 350 until done.

This weeks meals include:

spaghetti & meat sauce (just about every Tues, my kids complain if we have it on a different day)

Asian baked chicken (new recipe, not a keeper)

calico beans over rice

tamale lentil casserole w/fritos

hamburgers wtih corn on the cob adn baked beans

sweet kielbasa over rice (new recipe, not yet tried)


We do not eat meat on Fridays.... but the challenge is I do not like fish and I have one child that can't have dairy...... sigh

are these the sort of ideas you're after, DeEtta?? (Don't even lie to me.)

In the summer, I do not believe in cooking when it is over 100 - I believe people should eat sandwiches & salad & the occasional taco or burrito.

What else? I divide my grocery list/menu plan up by type of meat. So for chicken I have poppy-seed chicken (totally not healthy but tastes really good over fettucini), chicken & noodles, chicken & rice (baked or sauteed - kids prefer latter), chicken tetrazinni, fried chicken; beef: pot roast, BBQ meatloaf, sloppy joes (just gr chuck & BBQ sauce), Italian beef sandwiches, the aforementioned burritos or tacos or taco salad, ever-popular spaghetti, ham with baked macc & cheese or au gratin potatoes, beans . . . is it supper time yet?

I haven't been very inventive lately. We usually have a stir fry meal once a week. Brown rice in one pot, extra firm tofu (freeze first then defrost) stir friend in a little oil and then some natural soy sauce with some vegetable bouilion sprinkled on it in secod pan. Other frying pan broccoli, cauliflower, onions (cut in large pieces so those who don't like them can easily avoid them!) Green and red peppers, some sort of greens such as chinese cabbage or really anything, sometimes carrots. Stir fry in a little oil until just done.

One day is usually pizza day, sometimes 6 individual "make your own" ones (dough from bread maker) sometimes I do two large. Toppings usually black olives, peppers and onions (adults only), sometimes TVP. Sauce and vegan cheese. With this we would have a salad, garlic bread (again bread machine usually)and sometimes french fries depending on if I feel like peeling the potatoes! I have cooked these in a little oil in the oven on trays but everyone does prefer the unhealthy fried method.

We usually have a pasta meal with salad and bread. I like scalloped potatoes but that isn't healthy even when it's vegan since I do use white flour(unbleached but still white!) and a fair amount of margarine in it.

Lately we've had baked beans (well everyone except me who doesn't like baked beans) with rice, stewed tomatoes and a veggie once a week.

In the winter I make a meal which everyone loves once a week, it is veggie burgers (check some are much better ingredients than others) baked in a gravy in the oven. Baked potatoes and two or three vegetables.

I don't know if that is much help at all to you if I think of something better I will post again.

Sorry De'etta, I with liz on the summer time over a 100 and not cooking thing. Actually, I think during my last month and a half of pregnancy, I just don't cook, period. We're existing on sandwiches (when I make bread), quesadillas (when Ian buys them), fresh fruit, shakes, and the occasional salad. And a lot of eggs. Oh, and I'm making a LOT of ice cream. I'm eating most of it too though, so I guess it's not a family dinner!

Tonight we had homemade fried rice.

Last night we had pancakes, bacon and eggs

Over the weekend it was eating out with the ILs.

Before that we had crock pot stew, tacos/tostados, pasta.

I like to make homemade pizza with dough from the bread machine. I have been experimenting lately with making taco pizza which is a favorite of mine that we can't buy anymore. I throw a little corn meal in the dough, use salsa instead of pizza sauce, add taco seasoned meat (I use spices from the cabinet or Bearitos Taco seasoning), and Sargentos (FG approved) Mexican blend cheese. After it is baked, top it with shredded lettuce, olives, and Toasted Corn flavored Doritos (FG appproved), and any other taco toppings you like.

DUH....why didn't I think of that? I'm so new to TX that I'd not REALIZED that the insane HEAT is why I don't feel like cooking....I kept thinking what is WRONG with my attitude....why can't I get motivated to cook a meal....I usually don't mind....ok Liz and Becky...I get it now....

BUT I do still love all these ideas and need to do them. If I could bite the bullet and do a big cooking day I could have healthy meals in the freezer and not have to cook.....I used to do a huge cooking day in April in San Antonio for that very reason....

I feel much better now - and I'm getting some great ideas.....

Lisa - I'm honored that you posted....are you feeling a bit less of the morning sickness? I've been praying for you and the little one.

More seriously, when I am not so stressed out, a typical week or two would consist of these types of meals depending on the season:

Grilled Chicken w/roasted veggies & salad

Hamburgers w/sweet potato fries & salad

A pasta dish: speghetti, lasagna, fettuchinni alfredo, or peanut butter pasta (which sounds weird, but it's really good)

A stir fry, either veggie or veggie and chicken (really good with dried coconut and cashews) &
fried rice

An indian curry meal because Ian and I love curry, the kids eat raita (cucumber/yougurt dip), flat bread, meat, rice, dahl (lentils)and chutney. We eat the actual curry and spicy chickpeas (and everything else).

A mediterranean chicken dish w/tabbouli salad

A thai curry meal (because we love curry), the kids eat rice and curry that's been watered down with coconut milk

Meatloaf (made w/wheat berries is really good), mashed potatoes, steamed or fresh veggies

Oh, we make pizza weekly because the kids love it and we can incorporate just about anything on a pizza (for instance, one of our favorites is squash, olive, pepper, and feta cheese). The kids like mushroom, pepper, and pineapple.

In the summer it is normal for us to do smoothies for dinner- thick smoothies w/millet, seeds, nuts, yogurt, tahini or peanut butter, fruit...

And in the winter I go soup/stew crazy

In an ideal world (when I'm not this pregnant), we eat one totally raw meal daily which includes a hefty salad.

My kids eat salad because I'm a really mean mom. If I give them a food and I know they haven't given it a chance then I take it away and they eat it for the next meal- no snack in between- till eventually they eat it. We really haven't had that many food struggles, and we've never had a continuous battle. We face the issue once or twice with each child and that's it. Of course, I guess they're still young...

Now, I know that many will be shocked, but I'm not all that bad. Micaela hates bananas. I do not make her eat bananas, but if that's the only snack available (like when we're out), I don't go out of my way to offer her anything else either. The boys don't hate anything in particular, so they're stuck eating everything.

I guess this is really long enough now :)

We also like Chili and Tuna Noodle Casserole. I made Beef Brisket with the lipton onion soup mix and mustard for dinner last night and it was a hit.

Oooh! One of our favorite soups is from Rachel Ray and it's called Minestra Soup or Beans and Greens as she calls it. Very tasty!

Minestra Soup

4-6 cloves garlic, crushed
1/8 lb pancetta, sliced and chopped
2 tbsp olive oil
1 med onion, chopped
2 pounds escarole(we sometimes use fresh spinach and it's good)coarsely chopped
2 cans cannelini beans, drained
1 quart prepared chicken stock or broth
a couple pinches of nutmeg
Coarse salt and pepper
Shaved parm cheese

Cook garlic and pancetta in oil. Add onions then cook everything besides the escarole for about 15 min. Add escarole and cook until tender. Enjoy.

I do something very similar to liz's soup, except without the ham and I use kale instead of escarole or spinach. It's really yummy and very easy in winter to throw together (if you think ahead and have beans ready).

Other favorite soups are split pea, fresh tomato, Ian likes pumkin soup (it's ok), and made up soups using whatever veggies/stocks/meats/pasta or rice I have on hand.

French bread bowls go good with soup :)

You said you wanted more so...I really like to have salad type emals on the hottest days and it sounds like we're getting your 100 plus degrees later this week. I make potato salad with any of the non dairy/non egg Mayonnaise. Add ins are onions and peppers or cut up veggie slices (like cold cuts)olives or green beans. Sometimes it's nice to have a basic potatoe salad and then a green and yellow bean slad together. The Mayonnaise type thing on one and an Italian dressing or oil and vinegar. I find that these two taste nice together.

Pasta sald is nice with black olives green beans, beets if you don't mind the pasta turning pink/purple from the beets! Most any veggies can be added to a pasta salad to vary it, corn, tomatoes, shredded carrots and corn are nice together with an Italian dressing.
