Vegetable Quinoa Salad (Sugar Free Mom)


Quinoa is a new grain for us. I found this recipe at Sugar Free Mom....

Such a colorful salad

Ingredients

1 cup uncooked quinoa
2 cups water
1 cup fresh (packed) spinach
1 stalk celery, chopped
1 cup sliced cucumber
1 cup cherry tomatoes, halved
2 scallions, chopped
1/4 cup mild banana peppers rings

Balsamic Dressing
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon minced garlic
1/2 teaspoon garlic powder

Directions
Place one cup of dry uncooked quinoa in a pot with water. Bring to a boil. Cover and simmer for 15 minutes until all water is absorbed. Remove from heat and allow to cool. In a large serving bowl add your chopped vegetables. In a small bowl whisk together dressing ingredients. Combine cooled quinoa with vegetables and toss with dressing. Makes about 4 1/2 cups.

Note: I used Kale in place of spinach... this seemed to be a lot of quinoa...I may use less next time.

This recipe looks really good. I just bought some quinoa and this would be a good place to start. Thank you for adding some of your recipes. I am not vegan or even vegetarian, but can do without meat for many meals. We love beans in almost any form.

I have enjoyed your Christmas posts. Thanks for sharing that also. No snow in West Virginia today, but probably will have some later in the week.

:):):):) siss, will have to try. I still like raw veg's best.... and like to dip them. read the other day or heard on TV that most raw vegie's are not good for you. NUTS! Who want's slimy ones? love/prayers - mom t.

OK - this recipe had too much quinoa in it for our taste...we'd like more veggies and a touch of quinoa....and we found we liked it best topped with Gram's dressing as it didn't have too much zip as written....but it's a start. LOL
