Where has this week gone?

Today we did school. We've begun studying China.

I was supposed to go out to lunch with a friend but realized at the last minute that Cy had gone to work, and I had to take the older boys to their weekly ministry opportunity and that meant there was no one to watch the younger ones. It's been a while since THAT has happened. ::snort:: Debbie was very gracious about the whole thing. I was glad she'd come into town to get her hair cut anyway and not JUST to have lunch with me.

I ran to the bank and cashed checks for produce co-op.

I ran to Albertsons and picked up manicotti shells. Arielle helped me stuff them. I HATE that job...but my children LOVE manicotti. Bre and Krista used to do this for me. I tried to use the Pampered Chef decorating gun thing to fill them - but that didn't work very well. I suspect my filling was to hefty.

I wrote a newsletter for produce co-op and then realized that this computer isn't hooked up to a printer. I tried to hook up the printer but had no success at all.

We set up tables and baskets for co-op tomorrow.

There was recently a "mother" retreat locally. One of the focus' was healthy eating. I've had several call this week about both the shop natural and the produce co-op.

I picked up a book for $4 at Sam's Club.

I really can't think of anything else I did. I've been up since 4 a.m. and it's time to call it a day.

I can make manicotti ONLY by doing two things.

1) Don't cook the shells.

2) Stuff them, uncooked. I used a ziplock bag with the corner cut off.

When you lay them in the pan in the tomato sauce, add an extra cup of water (to my 9/13 pan with 14 shells inside). It will cook the shells. Really.

I think Lee tried this on my suggestion too.

Kristine--what a great suggestion. I bought manicotti this evening. Timely help. I do this with my lasagna recipe. I never thought to try it with manicotti.

De'Etta--don't keep us in suspense. What book did you find??

For some first hand info on China email Celia and/or Marge. If you want their email addresses I'll send them in a regular email.

Marge was teaching there a long time and traveled around a lot. Celia not as much but Dionie has been all over the place. They live in Shanghi.

Yep, use a ziplock bag with the corner cut off. Or buy jumbo shells to stuff Those you can do with the spoon and they taste the same.

De'Etta - that is one job I don't care for either. I love stuffed shells but avoid them because I don't care for the setup. Now that I have read Kristine's suggestion . . .I will give that a try.

THIS is how I do it - well the uncooked pasta - 1 cup water...but the Ziploc bag is what I will do from now on for fillng! I wonder why I didn't think of that...I use a baby spoon and fill them. ::snort::

Has anyone found any whole wheat manicotti or pasta shells? This is the one dish we still use "white pasta" for because we can't find the whole grain.

If you do find WW Manicotti shells, please share. We love manicotti and also have to use white shells because I have never found WW. I do have a recipe I found recently for manicotti with lasagna noodles and then you roll them up. I suppose you could use ww lasagna noodles for those.

Just thinking out loud.
