"Parmesan Cheese" (Vegan)


1 Cup lightly-salted cashew halves
1 C Nutritional Yeast flakes
1/4 - 1/2 tsp  garlic powder (optional)

Note - discovered adding nutritional yeast flakes to this makes the flavor much more cheese like - start with 1/4 C and adjust to taste.

Add cashews to food processor or blended. Process about 15 seconds until cashews resemble the texture of Parmesan cheese.

Hmmm have to try this. I usually just buy the vegan Parmesan and it's expensive!

I've stayed away from the "fake" cheeses because of the expense and because I've done vegan without them so it seems wise not to decide I like them as we may move somewhere where I can't get them....all that to say - I'm not sure this DOES taste like Parmesan as I've not had it in a long time....but it IS a nice addition to the lasagna, salads....
