Pizza making craze
One day several months ago, Jamin heard Mike and I talking about the money that could be saved by convincing the children to eat home made pizza on Friday nights. I used to ALWAYS make home made pizza but got out of the habit in AK and so we began to eat pizzeria pizza. Now, of course, the little ones prefer that over homemade. I commented that at $40 a week it was over $2k a year for pizza. We could save that for something else if they would switch. Jamin went to each child from youngest to oldest and they agreed that if he could make it taste like Pizza Hut they’d be willing to eat homemade. That’s his mission. He searched for a Pizza Hut crust recipe. It was like mine except for using baking powder along with yeast and a bit of garlic in the crust. The texture was still not quite right though it tastes yummy. I found some great cheese – monster cheese (think it’s Muenster) at Sam’s club which they all liked. Yesterday he searched some more. He found a site that talked about a Mom who worked with a big pizza company in their research and development department for years. He paid and downloaded the e-book and video demo. We can’t get the demo to work but he began to search for her secrets. I read to find out WHICH company she worked for – Dominos back when it was going through the huge growth it experienced. So far we’d noted that it isn’t so much any new thing that we need to buy as much as trying her new technique. I was relieved that her special flour is NOT all purpose – bleached. She says to use spring wheat – high gluten grown in MT….well we HAVE that since our vacation. Jamin wants me to find some pizza screens to use but says we have everything else. We’ll let you know how it tastes Friday night.

Well - we keep tweaking. At this point I really like our crust recipe but the texture is still different. If this makes pizza that tastes "right" it will be well worth the $19.95 we invested. LOL

We sure would love having you living in Eugene/Springfield with nothing else to do but cook for us. Actually me (G'Ma) is the one who likes other peoples cooking so much.

Anxious to see what some of the secrets are.
